Harvest Rolls

I call these bad boys harvest rolls, because they are my definition of a fall time comfort food. They are perfect for a dinner on a cool night, or a game day meal. Packed full of veggies and seasoning, they are a delicious melt in your mouth treat the whole family will enjoy. Of course these are vegan, but non-vegans would enjoy these delicious rolls. Check out the recipe below.


Prep Time: 5 min.

Cook Time: 15 min.

Bake Time: 10 min.

Total Time: 30 min.


Ingredients:

∙Salt 1TBS (or to taste)

∙Black Pepper. I used

a drop of black pepper essential oils, but you can use regular black pepper.

∙Garlic Powder 1 TBS (or to taste)

∙Half a head of green cabbage (chopped)

∙1 Large onion (chopped)

∙1 Can black beans. Feel free to use dried beans. Just soak over night, and then cook before using. I’m a full time mom and student, so cans are easiest for me.

∙1 Bg. Yeast Rolls. Use any brand you prefer, most are vegan as they do not contain milk or eggs. Of course if you would like to make your own yeast rolls, please do. Home made is always better. I would do that myself, as I said before I’m a busy momma. But perhaps during Thanksgiving break. Maybe you’ll see some yummy bread recipes to come.


Directions:

1. 4 hours before you decide you want to cook your food, set out your yeast rolls to proof. The technique I used is simple. Grease a sheet pan, place your rolls in rows of 3 on the sheet pan. Grease your plastic wrap, and then wrap your pan. Set aside for 4 hours.

2. Once your rolls are proofed, and your vegetables are chopped, pour them as well as your beans in a pot on medium heat. Add your seasoning. Cover the pan and let simmer. Stirring occasionally.

3. While your vegetables are cooking, preheat your oven to 375.

4. When your beans are soft, and the vegetables are cooked, turn your heat off.

5. Depending on how big your proofed bread dough is, you might want to combine two together. Roll in a ball, and on a clean surface, roll them flat. Note, they don't need to be incredibly flat, just enough to add your mixture to.

6. Add your mixture to the middle of your flat dough. Pinch all the sides together until it makes a ball.

7. Place your ball back on your already greased sheet pan, and repeat the process until your pan is filled and ready to go in the oven.

8. Once ready to go into your preheated oven, place your sheet pan in the middle of the center rack. Bake for 10 minutes. Or until golden brown on top.

9. Take out your rolls, and let cool for a few minutes.
